Is there any way to make <bitrate> output "192" instead of "192 kbps" and similar to that make <Ch. mode> output "JS" or "ST" instead of "Joint-Stereo" and "Stereo"?

If you are talking about outputting this data to the filenames, you can simply do a sweep with the "Direct rename files" tool (using the substring replace feature of the casefix tool) after the auto rename, and you can then make them have practically any format you want.

No, there is no way to do that directly, correct. I try to stay away from adding redundant settings whose purpose can be accomplished in other ways, since it adds unnecessary complexity for users to the program. It's a constant compromise when developing software like this.

Ok...I thought that maybe the output format is stored in some editable library file, so i could change it myself without affecting other users ;)
