How do I write to the Description tag ??  I don't see it anywhere in MP3/Tag ...

I'm not sure exactly which tag field you are referring to? There is no tag field called only "description" in the ID3v2 standard, please be more specific.

In iTunes there is a description tag .... where is that data pulled from ?

I'm not sure, since I don't use iTunes myself.

But you could test to add something in this field from iTunes, and then see if you notice something being added in some field in e.g. the Advanced ID3v2 info window of the browse tool in Mp3/Tag Studio, for the file in question.
