I previously encoded a number of audio cassette files that I recorded using line-in. I tagged them manually. Unfortunately, their quality is not good. I'm recording them again using a better mp3 encoder. Is there a way to copy all of the tag information from the old file to the new one in a single step or in very few steps?

Yes, sure. For single files, simply use the copy/paste tag feature of the browse tool or the shell extension.
For multiple files, first export the tags of the files to a text file with the list creation tool, and then import it to the new files with the "Tag/rename from list" tool. Two quick sweeps, and then all your tags will be moved.

Absolutely.
First, pick the fields you wish to retain the info from.
Let's say for example they are artist, album, tr#, and title.
In the top right hand corner of MP3TS you'll see a section called 'active tool set' with 2 buttons. Press the 2nd button (File tools...)
Go to the 'Create custom lists' tab. Where it says 'output file', browse to a folder and create a file name.
In the 'file row format' section, make sure 'advanced mode' is unchecked. Then, check the boxes below that, that correspond to the fields you want to keep (artist, album, etc).
Click execute. That's the first half. You've just created a text file with all the data in it.
Once you've got your new, high quality MP3's ready to tag, go back up in the top right hand corner, and click on 'Name and tag tools'.
Select the 'tag/rename from list' tab.
Where it says 'input list', browse for the text file you created earlier.
Again, in the file row format section, make sure you tick all the same boxes you used when you created the list, and click execute. This will parse all the info from the text file into the relevant fields of the new files.

3 quick caveats!

In both the tools I've just described, there is a 'field separator sequence' which by default, should be showing a semicolon. Just make sure that in both cases, the separator is the same (ie don't use a semicolon in the 'create list' tool and then use a hyphen in the 'tag from list' tool, 'cause that's just gonna screw it all up big time!
Also, make sure the 'order' box is showing the same order of fields in both the 'create list' and 'tag from list' tools. You can use the up and down arrows to change the order so that they are the same.
The other thing is, and hopefully, this would have been obvious to you, make sure that the files are created in the same order and named concurrently so that the info parsed out from your old files is in the same order as the new set of files to be tagged.
Obey all of that, and you should be laughing!
