Many mp3's have track 01/11, 02/11 designations as their ID3V2 track.  I would like to have a simple function that converts these to 01, 02, etc.  

Many thanks for an excellent program that is so full featured already!   :)

In File > Settings > General tagging and renaming there is a setting to ignore ID3v2 'slashes' in track numbers. Make sure that is checked. That should take care of new files which you are tagging. If you want to change files which are already tagged properly otherwise, perhaps you could use Direct tag manipulation:
<TrackNr_v1> -----> <TrackNr>

If your ID3v1 track numbers are correct, this should overwrite the v2 track numbers without bothering about any other aspects of the files. Come to think of it, you could probably just use:
<TrackNr> -----> <TrackNr>

and not worry about ID3 version at all.  :)
