I wish that the 'Advanced mode' checkboxes did not turn off the GUI features in the related tool. Perhaps there is a technical reason for this - I cannot speak to that. But I can address this from an interface designer's opinion:
1) State indication should not be the reason for this because the checkbox itself provides information about the state, ie. manual editability of the string (textbox contents).
2) The burden of consistent and accurate effort should be upon the program, not the user. Thus expecting that the user will always set up their base string elements perfectly before beginning Advanced Mode edits is not reasonable.
3) It would be immeasurably cooler

As you suspect, there is a technical reason for this.

It would be impossible to describe most advanced mode templates with the normal controls, and hence it would just be inconsistent and confusing to have them there.

In advanced mode, you can instead use the right-click menu of the template edit box to insert fields.
